Adrian, let me tell you something in english, just to be sure we understand each other.
English and french have something in common, we've got to pick the right words when trying to express something precisely and translators are not the best at this game.

He meant that only hops would bring the sufficient glucoamylase to transform the whole batch.
That's what I answered to:

Telling hops and sugar won't bring in the enzymes and that he might had misread and misunderstood something.
I must admit I've been pretty fast on this, and it's lacking of scientific rigor. I wanted to mean that enzymes weren't brought by hops nor sugar but that they're added.
Yes
https://onlinelibrary.wiley.com/doi/epd ... .tb06070.x says it all, hops bring some enzymatic activity, but compared to diastatic yeast, which one wins ? I have yet to find a scientific comparison of which will be the most active.
You used harsh words against me. That's fine.
I hope we are all here to learn and help each other to gain knowledge. In 13 years here I guess I learned a lot.
I know that I lack of some things due to a condition and that I assume that many things will be understood the way I thought it.
Language is not that simple and I took too many shortcuts that made you believe that I was against you even if it was not the case.
I sincerely apologise.
There are many ways to debate, being rude may not be the best.

https://onlinelibrary.wiley.com/doi/epd ...
Merci
