Impression générale

Incontestablement houblonnée et amère, une American pale ale forte, présentant des variétés modernes de houblons américains et du malt de seigle. La balance penche vers le houblon, avec un profil de fermentation net, un final sec, et net, les malts permettant à une palette créative de houblon de s'exprimer.

A decidedly hoppy and bitter, moderately strong American pale ale, showcasing modern American and New World hop varieties and rye malt. The balance is hop-forward, with a clean fermentation profile, dry finish, and clean, supporting malt allowing a creative range of hop character to shine through.

Arôme

Arôme de houblon marquant à intense, présentant une ou plusieurs caractéristiques des houblons américains, comme le côté agrumeux, floral, pineux, résineux, épicé, de fruit tropical, de fruit à noyau, de melon ou de baie, etc. Beaucoup de versions ont subit un dryhopping et peuvent alors avoir un arôme supplémentaire de houblon frais ; le dryhopping est désirable mais n'est pas obligatoire. Le côté herbeux doit être minimal si il est présent. On peut trouver un léger arôme poivré dû au malt de seigle. Un léger à moyen-léger arôme clair de malt-grain peut être présent en arrière plan. Un côté fruité par la fermentation peut être trouvé dans certaine version bien qu'un caractère de fermentation neutre puisse être acceptable. Une note persistante d'alcool doit être au mieux minimum si elle est présente. N'importe quel houblon américain est acceptable ; de nouvelles variétés de houblons ne doivent pas restreindre ce style.

A prominent to intense hop aroma featuring one or more characteristics of American or New World hops, such as citrus, floral, pine, resinous, spicy, tropical fruit, stone fruit, berry, melon, etc. Many versions are dry hopped and can have an additional fresh hop aroma; this is desirable but not required. Grassiness should be minimal, if present. It may have low peppery rye malt aroma. A low to medium-low clean grainy-malty aroma may be found in the background. Fruitiness from yeast may also be detected in some versions, although a neutral fermentation character is also acceptable. A restrained alcohol note may be present, but this character should be minimal at best. Any American or New World hop character is acceptable; new hop varieties continue to be released and should not constrain this style.

Apparence

La couleur va d'un doré modéré à clair rouge ambré. Doit être claire, bien que des versions avec dryhopping et non filtrée peuvent être légèrement trouble. Mousse moyenne, blanche à blanc-cassé avec une bonne tenue.

Color ranges from medium gold to light reddish-amber. Should be clear, although unfiltered dry-hopped versions may be a bit hazy. Medium-sized, white to off-white head with good persistence.

Saveur

Saveur de houblon moyenne à très élevée, et doit refléter un caractère de houblon américain, fruit tropical, à noyau, l'arôme d'agrume, floral, épicé, de baie, de melon, de pin, résineux etc. Moyenne-élevée à très élevée amertume. Saveur de malt doit être légère à moyenne-légère et est généralement nette et grain-maltée bien que des arômes légers de caramel ou de grillé sont acceptable. Une légère saveur de grain épicé provenant du malt de seigle doit être présente. Une légère saveur fruitée venant de la levure est possible mais non obligatoire. Le malt de seigle donne un final sec ; douceur résiduelle de légère à nulle. L'amertume, la saveur du houblon et le final sec peuvent persister dans l'arrière-goût mais ne doivent pas être trop dur. Une très légère et nette saveur d'alcool peut être notée dans les versions les plus fortes.

Hop flavor is medium to very high, and should reflect an American or New World hop character, such as citrus, floral, pine, resinous, spicy, tropical fruit, stone fruit, berry, melon, etc. Medium-high to very high hop bitterness. Malt flavor should be low to medium-low, and is generally clean and grainy-malty although some light caramel or toasty flavors are acceptable. A light grainy spiciness from rye malt should be present. Low yeast-derived fruitiness is acceptable but not required. Rye malt contributes to a dry finish; residual sweetness should be low to none. The bitterness, hop flavor and dryness may linger into the aftertaste but should not be harsh. A very light, clean alcohol flavor may be noted in stronger versions. 

Corps

Corps moyen-léger à moyen, avec une texture onctueuse. Carbonatation moyenne à moyenne-élevée. Pas d'astringence agressive. Très légère et douce sensation de chaleur dûe à l'alcool n'est pas un problème si elle n'interfère pas avec la balance globale.

Medium-light to medium body, with a smooth texture. Medium to medium-high carbonation. No harsh hop-derived astringency. Very light, smooth alcohol warming not a fault if it does not intrude into overall balance.

Commentaires

Une bière artisanale américaine variante de l'American IPA. Le caractère de seigle malté doit être reconnaissable, sinon on reste dans la catégorie American IPA. Le chêne est inapproprié dans ce style ; si vraisemblablement vieillie en fût de chêne, on entre dans la catégorie "vieillie en fût de bois".

A modern American craft beer variation of American IPA. Rye malt character should be noticeable, otherwise enter in American IPA. Oak is inappropriate in this style; if noticeably oaked, enter in wood-aged category.

Histoire

Cherchant à complexifier et à varier leurs IPAs, les brasseurs artisanaux et les brasseurs amateurs ont remplacé par du malt de seigle une partie du malt de base. Rye IPAs, RyePAs ou encore RIPAs ont trouvé leur place dans de nombreuses rotations saisonnalles dans les brasseries artisanales.

Looking to add complexity and variety to their IPAs, craft brewers and homebrewers substituted rye malt for a portion of their base malt. Rye IPAs, RyePAs or RIPAs have found a place in many craft breweries seasonal rotations.

Ingrédients

Malt pale ale ou 2-row brewers comme base, 15 à 20% de malt de seigle, houblon américain, levure américaine ou anglaise avec un léger ou nette profil fruité. Généralement tout-malt, mais empâtée à basse température pour obtenir une forte atténuation. L'ajout de sucre pour aider à l'atténuation est toléré. Le caractère de l'eau varie, légèrement à modérément sulfaté. Limiter l'utilisation de malt crystal qui pourrait à grande quantité mener à un final doux et rentrer en conflit avec le caractère houblonné.

Generally all-malt, but mashed at lower temperatures for high attenuation. Sugar additions to aid attenuation are acceptable. Water character varies from soft to moderately sulfate.
