For wines, meads and ciders, backsweetening is sometimes used to add sweetness after fermentation is complete. First sorbates and sulfites are added to stabilize the beverage and prevent further fermentation and then a sweetener is added to raise the final gravity to the desired level.

The backsweeten tool is designed to calculate the amount of sweetener needed to raise the final gravity (after adding sulfites and sorbates).

Using the Backsweeten Tool

  • Select the Backsweeten Tool from the Tools menu or ribbon.
  • Enter the Batch Volume and Gravity of the finished beverage. Make sure you have added sulfites and sorbates to stabilize it and prevent further fermentation.
  • Enter the Desired Gravity which will determine the final sweetness level (in part).
  • Choose the Sweetener to use and adjust its potential if needed
  • The program will show the volume or weight of sweetener to add.
